Let’s Get Cooking
Ingredients
For 4 servings
You’ll Need
- Large rimmed baking sheet (or two)
- Foil or parchment paper
- Large bowl and small cup
- Cutting board and sharp knife
- Instant-read food thermometer
Method
Heat the Oven and Mix the Seasoning
Heat the oven to 425°F (220°C). Line a large rimmed baking sheet with foil or parchment. In a small cup, stir together the Italian herbs, garlic powder, paprika, salt and pepper.
Start the Potatoes
Toss the potatoes and onion with 2 tbsp oil and half of the seasoning. Spread them on the baking sheet in one layer and roast for 15 minutes.
Season the Chicken
While the potatoes roast, toss the chicken pieces with 1 tbsp oil and the rest of the seasoning in a large bowl. Wash your hands and anything the raw chicken touched.
Add the Chicken and Broccoli
Stir the potatoes and push them to the edges of the pan. Add the chicken and the frozen broccoli in a single layer. Roast for 18 to 22 minutes more, until the potatoes are browned and the thickest piece of chicken reaches 165°F on a food thermometer.
Serve
Toss everything together on the pan and serve hot.
A Little Extra Guidance
Recipe Notes
Ingredient checks, storage, and food handling guidance.
Before You Cook
The potatoes get a head start in the oven, then the chicken and broccoli join them for the last 20 minutes, so everything finishes at the same time. Frozen broccoli goes straight onto the pan without thawing.
Crowding makes food steam instead of roast. If everything will not fit in one layer, split it across two pans and swap their oven positions halfway through.
Choosing Gluten-Free Ingredients
The seasoning here is built from single-ingredient spices, which are naturally gluten-free. If you use a ready-made seasoning blend instead, choose one labeled gluten-free, because some blends add wheat-based fillers. Line the pan with fresh foil or parchment, especially if it has baked-on crumbs from breaded foods. See the FDA guide to gluten-free labels.

Food Handling and Leftovers
Use a food thermometer and the safe cooking temperature chart. Refrigerate perishable food within two hours, or one hour above 90°F, in shallow containers. Keep the refrigerator at 40°F or below. Use refrigerated cooked leftovers within 3–4 days; reheat cooked leftovers to 165°F. See USDA leftover guidance.

Storage and Leftovers
Refrigerate leftovers in a covered container within 2 hours and use within 3 to 4 days. Reheat on a baking sheet at 400°F for about 10 minutes, or in the microwave, until steaming hot (165°F).
